Banana Bread

Last week i decided to bake some Banana Loaf and thought I would share it with you!

I used Tanya Burr's cook book, "Tanya Bakes"

She calls it "Australian Toasted Banana Bread".  The recipe is for about 8-10 servings, depending on how thick you cut the slices!

The Ingredients:
150g Soft Butter
350g Peeled Ripe Banana
160g Soft Dark Brown Sugar
2 Large Eggs
1 Teaspoon Vanilla Extract
200g Plain Flour
2 Teaspoons Baking Powder
1 Teaspoon Salt

You basically cream together the butter and sugar, until its light and fluffy.  Add the eggs and vanilla extract and then the flour, baking powder and salt.

Stir in the mashed banana then pour into your loaf tin. 

Your oven should be preheated to 170 Celsius.  My loaf took around 50 minutes to cook, but I did it in two sessions, I did 25 then 25.  This was just to make sure I didn't over cook it!

Safe to say this went down well with my family, it was gone within a couple of days!! 

I would highly recommend Tanya Bakes in general though, as I have made a few things from it!  Its an easy recipe to follow and doesn't have much preparation time at all, its so simple.
